Citrus Herb Flounder with Garlic Parmesan Roasted Broccoli

Ingredients:

  • For the Flounder:

    • 4 flounder fillets (about 6 ounces each)
    • 2 tablespoons Fish On Fish & Seafood Rub
    • 2 tablespoons olive oil
    • Salt and pepper to taste
    • Lemon wedges for serving
  • For the Citrus Herb Butter Sauce:

    • 4 tablespoons unsalted butter
    • 2 cloves garlic, minced
    • Zest of 1 lemon
    • Zest of 1 orange
    • 2 tablespoons fresh lemon juice
    • 2 tablespoons fresh orange juice
    • 1 tablespoon chopped fresh parsley
    • Salt and pepper to taste
  • For the Garlic Parmesan Roasted Broccoli:

    • 1 head of broccoli, cut into florets
    • 2 tablespoons olive oil
    • 2 cloves garlic, minced
    • 1/4 cup fresh grated Parmesan cheese
    • Salt and black pepper to taste
    • Lemon wedges for serving (optional)

Instructions:

  1. Prepare the Flounder:

    • Pat the flounder fillets dry with paper towels.
    • In a small bowl, mix together Fish On Fish & Seafood Rub with olive oil to create a paste-like consistency.
    • Season both sides of the flounder fillets generously with salt and pepper.
